Ingredients
3 cups cooked chicken breast, shredded or diced
1 sheet puff pastry, thawed in refrigerator
2 cups carrots, diced small
1 cup frozen peas, thawed
2 cups low-sodium chicken broth
0.5 cup heavy cream
0.25 cup all-purpose flour
0.25 cup unsalted butter
1 large egg, beaten (for egg wash)
1 teaspoon fresh thyme
2 cloves garlic, minced
Salt and black pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Melt the butter in a large deep skillet or Dutch oven over medium heat.
Add the carrots and garlic to the skillet and sauté until the carrots begin to soften, about 5 minutes.
Whisk the flour into the butter to form a smooth paste and cook for 1 minute.
Slowly pour in the chicken broth and heavy cream, whisking constantly until the sauce is smooth and thickened.
Stir in the shredded chicken, peas, and fresh thyme, cooking until the mixture is warmed through.
Transfer the mixture to a deep-dish pie plate or leave it in the oven-safe skillet.
Roll out the puff pastry slightly and drape it over the filling, trimming the edges and pressing to seal.
Cut a few small slits in the center to allow steam to escape and brush the top with the beaten egg.
Bake for 20-25 minutes or until the pastry is puffed and deep golden brown.
Notes
Use leftover rotisserie chicken to save even more time. Ensure the chicken broth is cool or room temperature when adding to the roux to prevent lumps. For a lighter version, substitute heavy cream with whole milk. Keep the puff pastry chilled until the very last moment before baking to ensure the best rise and flakiness.
