Description

These Pine Nut Biscotti Cookies are crunchy, golden, and lightly sweet with toasted pine nuts and a hint of lemon zest. Perfect for dipping into coffee or tea, they stay fresh for weeks and make a beautiful homemade treat.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 3/4 cup pine nuts, toasted
  • 1 egg for egg wash

Instructions

  1. Preheat oven to 180°C (350°F) and line baking sheet.
  2. Mix flour, sugar, baking powder, and salt.
  3. Whisk eggs, melted butter, vanilla, and lemon zest.
  4. Combine wet and dry ingredients and fold in pine nuts.
  5. Shape into log and brush with egg wash.
  6. Bake 25–30 minutes until golden.
  7. Cool 15 minutes, slice diagonally.
  8. Bake slices again until crisp and golden.

Notes

Toast pine nuts for deeper flavor. Chill dough if sticky. Store in airtight container for up to 2 weeks. Re-crisp in oven if needed.
