- 2 1/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 3/4 cup pine nuts, toasted
- 1 egg for egg wash
Instructions
- Preheat oven to 180°C (350°F) and line baking sheet.
- Mix flour, sugar, baking powder, and salt.
- Whisk eggs, melted butter, vanilla, and lemon zest.
- Combine wet and dry ingredients and fold in pine nuts.
- Shape into log and brush with egg wash.
- Bake 25–30 minutes until golden.
- Cool 15 minutes, slice diagonally.
- Bake slices again until crisp and golden.
Notes
Toast pine nuts for deeper flavor. Chill dough if sticky. Store in airtight container for up to 2 weeks. Re-crisp in oven if needed.
