Description
A rich, cheesy, one-pot meal combining crispy chicken, creamy tomato sauce, and pasta. Easy cleanup and hearty enough for family dinners.
Ingredients
1.5 lbs skinless chicken thighs
1 cup Italian seasoned breadcrumbs
2 large eggs
1 tbsp dry white vinegar (optional)
2 cups marinara sauce
1/2 cup heavy cream (or non-dairy cream)
1 cup grated Parmesan cheese
16 oz penne pasta (or linguine)
2 cloves garlic
Salt and pepper, to taste
2 tbsp olive oil
Instructions
Cut chicken thighs into 1-inch pieces and season with salt and pepper
Whisk eggs with vinegar in a shallow bowl
Spread breadcrumbs in another shallow bowl
Dredge each chicken piece in egg mixture, then coat with breadcrumbs
Heat olive oil in a large pot over medium-high heat
Sear chicken until golden brown
Add minced garlic and sauté for 1 minute
Pour marinara sauce into the pot and stir
Add heavy cream and Parmesan cheese, stirring until combined
Add uncooked pasta and stir to coat
Simmer uncovered, stirring occasionally until pasta is tender and sauce thickens (10-15 minutes)
Adjust seasoning with salt and pepper if needed
Serve hot
Notes
Use gluten-free breadcrumbs if needed
Non-dairy cream substitute works well
Chicken can be baked instead of fried for less fat
Marinara sauce may vary by brand, adjust seasoning as needed
Garnish with extra Parmesan and fresh basil if desired
