Ingredients
1.5 lbs chicken breasts, boneless and skinless, sliced into cutlets
1/2 cup sun-dried tomatoes, oil-packed and chopped
3 cups fresh spinach, packed and stems removed
1 cup heavy cream
4 garlic cloves, minced
1/2 cup chicken broth, low sodium
1/2 cup parmesan cheese, freshly grated
2 tablespoons olive oil
Salt, pepper, and dried oregano to taste
Instructions
Season chicken breasts on both sides with salt, pepper, and dried oregano.
Heat olive oil in a large skillet over medium-high heat.
Sear the chicken for five minutes per side until golden brown, then remove and set aside.
Add minced garlic to the skillet and sauté for one minute until fragrant.
Pour in chicken broth, scraping up any browned bits from the pan bottom.
Stir in the chopped sun-dried tomatoes and cook for two minutes.
Reduce heat to medium, pour in the heavy cream, and simmer until it begins to thicken.
Stir in the fresh spinach and cook until wilted.
Add the parmesan cheese and stir until melted into the sauce.
Return the chicken to the skillet to warm through and coat with the sauce.
Notes
Use half-and-half as a lighter alternative to heavy cream if preferred. Ensure the chicken is sliced into even cutlets to guarantee uniform cooking time.
