Description

This classic American comfort meal is a staple of traditional home cooking, featuring a moist, tender meatloaf seasoned with aromatics and finished with a tangy, caramelized tomato glaze. Using milk-soaked breadcrumbs ensures a perfect, tender texture while the ketchup-based glaze seals in savory juices. This reliable recipe is perfect for a hearty family dinner that is easy to prepare and consistently delicious.

Ingredients

Scale

2 lbs ground beef (85% lean)
1 cup plain panko or dry breadcrumbs
1/2 cup whole milk
1 medium onion, finely diced
2 large eggs
2 cloves garlic, minced
3/4 cup tomato ketchup (divided)
1 tablespoon Worcestershire sauce (ensure meat-free variety)

Instructions

Preheat oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper.
Combine the breadcrumbs and milk in a large bowl and let sit for five minutes to soften.
Sauté the diced onions in a pan until translucent and allow to cool slightly.
Add the ground beef, sautéed onions, minced garlic, half the ketchup, eggs, and Worcestershire sauce to the bowl.
Mix by hand until just combined, being careful not to overwork the meat.
Shape the mixture into a loaf on the prepared baking sheet.
Spread the remaining ketchup over the top of the loaf.
Bake for 60 minutes or until the internal temperature reaches 160 degrees Fahrenheit.
Let the meatloaf rest for 10 minutes before slicing to ensure it holds its shape.

Notes

Ensure your Worcestershire sauce is labeled as meat-free or vegan to maintain the dietary requirement. For the best texture, do not overmix the ground beef, as this can make the meatloaf tough. Let the loaf rest after baking to allow the juices to redistribute.
