2.5 lbs Beef Chuck Roast, cut into 1.5-inch cubes
4 large Carrots, cut into 1-inch thick rounds
3 large Yukon Gold potatoes, peeled and quartered
4 cups low-sodium Beef Broth
1 large Yellow onion, chopped
4 cloves Garlic, minced
2 tbsp Tomato Paste
1 tsp Thyme, fresh or dried
3 tbsp All-Purpose Flour
2 tbsp vegetable oil for searing
Salt and black pepper to taste


Instructions

Pat beef cubes dry with paper towels and season with salt and pepper.
Heat oil in a heavy-bottomed pot over medium-high heat and sear beef in three batches until browned on all sides; set meat aside.
Sauté onions in the same pot until translucent.
Stir in tomato paste and minced garlic, cooking for one minute until fragrant.
Sprinkle flour over the aromatics and stir well to coat.
Slowly whisk in beef broth, scraping up the browned bits from the bottom of the pot.
Return the seared beef to the pot, add thyme, and bring to a gentle simmer.
Cover and cook on low heat for 2.5 hours.
Add carrots and potatoes and continue simmering for another 30-45 minutes until vegetables and meat are tender.
Adjust seasoning and serve hot.

Notes

Ensure the beef is patted dry before searing to achieve a deep golden-brown crust. Do not boil the stew; keep it at a gentle simmer to ensure the meat remains tender. Store leftovers in an airtight container in the refrigerator for up to 3 days.
