Description
Tender navy beans simmered in a sweet and tangy tomato-based sauce, made vegetarian with apple cider, smoked paprika, and maple syrup. A meat-free take on a classic comfort dish.
Ingredients
1 cup dried navy beans (soaked 8+ hours)
1/2 cup raisins
1 large onion (diced)
2 tablespoons olive oil
1/4 cup maple syrup
1 tablespoon smoked paprika
1/2 cup apple cider
1/2 cup apple cider vinegar
1 bay leaf
Instructions
Preheat oven to 325°F
Gently sauté diced onion in olive oil until translucent
Add soaked navy beans, raisins, smoked paprika, and bay leaf
Pour in apple cider and apple cider vinegar mixture
Cover and bake for 2 hours
Uncover and simmer for 30 minutes until glossy
Remove bay leaf before serving
Notes
Add 1/4 tsp liquid smoke for enhanced smokiness
Soak beans overnight for optimal texture
Use cast iron pot for even heat
Simmer uncovered final 15 minutes for thicker sauce
Substitute black eyed peas or pinto beans if preferred
