Description

This timeless, classic American apple pie features a golden, buttery crust filled with tender, spiced Granny Smith apples. It is the gold standard for home bakers, designed to achieve a perfectly crisp base and a delightful balance of tart and sweet flavors without any soggy bottom. Simple, high-quality ingredients and precise temperature control ensure professional results in your own kitchen.

Ingredients

Scale

6 cups Granny Smith apples, peeled, cored, and sliced 1/4 inch thick
3/4 cup granulated sugar or light brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
2 tablespoons cold butter, cubed
2 discs pie crust (homemade or store-bought)

Instructions

Roll out the first dough disc on a lightly floured surface into a 12-inch circle.
Transfer the dough into a 9-inch pie dish, pressing gently against the sides.
Peel, core, and slice the apples into uniform pieces.
In a large bowl, toss the apples with sugar, flour, and cinnamon until evenly coated.
Pour the apple mixture into the prepared pie dish, mounding them slightly in the center.
Dot the top of the apples with small cubes of cold butter.
Roll out the second dough disc and place it over the apples, crimping the edges to seal.
Cut small slits in the top crust to allow steam to escape.
Bake at 425 degrees Fahrenheit for 20 minutes.
Reduce oven heat to 375 degrees Fahrenheit and bake for an additional 30 minutes until golden brown.

Notes

Keep the butter and dough cold until the moment it goes into the oven to ensure a flaky crust. Using light brown sugar instead of granulated adds a subtle caramel depth to the filling. Let the pie cool for at least one hour before slicing to allow the juices to set properly.
