- 300g fresh strawberries (chopped)
- 200g digestive biscuits or graham crackers
- 100g melted butter
- 250ml heavy cream
- 200g cream cheese
- 100g sugar
- 1 teaspoon vanilla extract
Instructions
- Crush biscuits into fine crumbs and mix with melted butter.
- Press mixture into a dish to form the base and refrigerate.
- Whip heavy cream until soft peaks form.
- Mix cream cheese, sugar, and vanilla until smooth.
- Fold whipped cream into cream cheese mixture gently.
- Add chopped strawberries and mix lightly.
- Spread mixture over the base and chill for at least 4 hours before serving.
Notes
Use ripe fresh strawberries for best flavor. Chill thoroughly before serving. You can substitute strawberries with raspberries or mango. Store covered in the fridge for up to 3 days.
