Ingredients
Graham Crackers, 1 1/2 cups
Sugar, 1/4 cup (or 2 tbsp for a lighter version)
Strawberries, 2 cups (chopped or frozen)
Heavy Cream, 2 cups
Vanilla Extract, 1 tsp
Lemon Juice, 1 tbsp
Instructions
Crush graham crackers into fine crumbs using a food processor or resealable bag
Add sugar to the crumbs and mix until evenly combined
Press the crumb mixture into the bottom of a 9-inch springform pan
Puree strawberries with lemon juice until smooth
Whip heavy cream until stiff peaks form
Fold the strawberry puree into the whipped cream until fully combined

Chill 4 hours until firm
Top with fresh strawberries and serve chilled
