- 2 cups couscous
- 2 1/2 cups vegetable broth
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 1 zucchini, chopped
- 1 cup chickpeas
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- 1/2 teaspoon turmeric
- Salt and pepper
- Fresh parsley
Instructions
- Heat olive oil in a large pot.
- Sauté onion until soft.
- Add garlic and spices and cook briefly.
- Add carrots, zucchini, and chickpeas.
- Pour in diced tomatoes and broth.
- Simmer for 15–20 minutes.
- Place couscous in a bowl and add hot broth.
- Cover and let sit for 5 minutes.
- Fluff couscous with a fork.
- Combine with vegetables and serve.

Toast spices for deeper flavor. Always fluff couscous with a fork. Add extra broth when reheating to maintain texture. You can add chicken or lamb for a non-vegetarian version.
