- 1 sheet puff pastry
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups fresh spinach, chopped
- 4 large eggs
- ½ cup heavy cream
- ½ cup milk
- ¾ cup shredded cheese
- ¼ cup crumbled feta
- Salt and pepper to taste
- ¼ teaspoon nutmeg (optional)
Instructions
- Preheat oven to 180°C (350°F).
- Cut pastry into circles and press into greased muffin tin.
- Sauté onion and garlic in olive oil, add spinach and cook until wilted. Cool and squeeze dry.
- Whisk eggs, cream, milk, cheese, salt, pepper, and nutmeg.
- Divide spinach mixture into pastry cups.
- Pour egg mixture over filling.
- Bake for 20–25 minutes until golden and set.
Notes
Squeeze excess moisture from spinach to prevent soggy crust. Use Gruyère or mozzarella for variation. Store in refrigerator up to 3 days or freeze up to 1 month.
