Description

These Mini Spinach Quiche are flaky, bite-sized savory pastries filled with sautéed spinach, eggs, cream, and cheese. Perfect for brunch, parties, or meal prep, these easy mini quiches are elegant, flavorful, and simple to prepare.


Ingredients

  • 1 sheet puff pastry
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 4 large eggs
  • ½ cup heavy cream
  • ½ cup milk
  • ¾ cup shredded cheese
  • ¼ cup crumbled feta
  • Salt and pepper to taste
  • ¼ teaspoon nutmeg (optional)

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Cut pastry into circles and press into greased muffin tin.
  3. Sauté onion and garlic in olive oil, add spinach and cook until wilted. Cool and squeeze dry.
  4. Whisk eggs, cream, milk, cheese, salt, pepper, and nutmeg.
  5. Divide spinach mixture into pastry cups.
  6. Pour egg mixture over filling.
  7. Bake for 20–25 minutes until golden and set.

Notes

Squeeze excess moisture from spinach to prevent soggy crust. Use Gruyère or mozzarella for variation. Store in refrigerator up to 3 days or freeze up to 1 month.
