Description

Enjoy a lighter, faster version of classic comfort food with these mini meatloaves. By baking in a muffin tin, you get the perfect ratio of caramelized edges to juicy, tender interiors. This recipe combines lean ground beef and turkey for a balanced texture, and the individual portions eliminate the crumbling common with large loaves. Perfect for quick weeknight dinners, these mini loaves retain moisture perfectly and are incredibly easy to serve.

Ingredients

Scale

1 lb Ground Beef (85% lean)
1 lb Ground Turkey
1 cup Panko breadcrumbs
1 large Egg
1/2 cup Yellow onion, finely diced
1/2 cup Tomato ketchup, divided
1 tbsp Non-alcoholic Worcestershire sauce
Olive oil spray for greasing

Instructions

Preheat your oven to 375 degrees Fahrenheit.
Grease a standard 12-cup muffin tin generously with olive oil spray.
Finely dice the yellow onion.
In a large bowl, combine ground beef, ground turkey, breadcrumbs, egg, diced onion, and 1/4 cup of the ketchup.
Mix the ingredients gently by hand until just combined.
Divide the meat mixture evenly among the 12 muffin cups.
Spread the remaining 1/4 cup of ketchup over the tops of the individual loaves.
Bake for 25 minutes or until the internal temperature reaches 165 degrees Fahrenheit.
Let the meatloaves rest for 5 minutes before removing from the tin.

Notes

Ensure the onion is diced very finely so the meat holds together well. If you prefer a more intense glaze, feel free to add a little extra ketchup or a dash of brown sugar on top before baking. Store leftovers in an airtight container for up to 3 days.
