Mini Gougères Bites are light and airy French cheese puffs made with choux pastry, Gruyère, and Parmesan. These elegant bite-sized appetizers are crispy outside and soft inside, perfect for brunch or entertaining.
Ingredients

- 1/2 cup (120ml) water
- 1/2 cup (120ml) whole milk
- 1/2 cup (115g) unsalted butter
- 1 cup (125g) all-purpose flour
- 4 large eggs
- 1 cup (100g) grated Gruyère cheese
- 1/4 cup (25g) grated Parmesan
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of nutmeg
Instructions
- Preheat oven to 200°C (400°F).
- Boil water, milk, butter, and salt.
- Add flour and stir until dough forms a ball.
- Cool slightly and add eggs one at a time.
- Mix in cheeses and seasoning.
- Spoon small mounds onto baking sheet.
- Bake 20–25 minutes until puffed and golden.
Notes
Do not open oven early to prevent collapsing. Use room temperature eggs. Reheat before serving for best texture.
