- ¾ cup heavy cream
- ½ cup whole milk
- 120g soft goat cheese, crumbled
- ½ cup fresh spinach, chopped

- ¼ teaspoon black pepper
- Pinch of nutmeg
Instructions
- Preheat oven to 180°C (350°F).
- Grease muffin tin and line with pastry circles.
- Sauté spinach briefly and cool.
- Whisk eggs, cream, milk, and seasoning.
- Add spinach and chives.
- Place goat cheese into pastry shells.
- Pour egg mixture into cups.
- Bake 20–25 minutes until golden.
- Cool slightly before serving.
Notes
Add caramelized onions or sun-dried tomatoes for variation. Store in refrigerator up to 3 days. Reheat gently in oven for best texture.
