Description
Experience the vibrant flavors of authentic Mexican street corn, known as elotes. This recipe features sweet corn cobs grilled to perfection with a beautiful char, then generously slathered in a creamy, tangy mixture of mayonnaise, crema, and lime. Finished with a dusting of bold chili powder, fresh cilantro, and crumbled Cotija cheese, this savory snack provides the perfect balance of smoky, juicy, and zesty textures in every single bite.
Ingredients
4 fresh corn cobs, shucked and cleaned
1/4 cup high-quality mayonnaise
1/4 cup Mexican crema or sour cream
1/2 cup finely crumbled Cotija cheese
2 tsp Ancho or Guajillo chili powder
1 tbsp freshly squeezed lime juice
1/4 cup fresh cilantro, finely chopped
Instructions
Preheat your grill to medium-high heat, approximately 400°F.
Place cleaned corn cobs directly on the grill grates.
Rotate the cobs every three minutes until charred on all sides and tender.
In a medium bowl, whisk together the mayonnaise, sour cream, lime juice, and half of the chili powder until smooth.
Brush the creamy mixture generously over the warm grilled corn.
Roll each coated cob in the crumbled Cotija cheese until evenly covered.
Sprinkle with the remaining chili powder and garnish with fresh cilantro before serving.
Notes
For the best flavor, use high-quality mayonnaise and traditional Mexican crema. If you cannot find Mexican crema, full-fat sour cream makes a suitable substitute. Ensure the corn is charred to achieve the authentic Maillard flavor profile.
