Ingredients

  • 3 eggs
  • 1/2 cup olive oil
  • 1/2 cup milk
  • 1 zucchini, grated
  • 1 carrot, grated
  • 1/2 cup olives
  • 1/2 cup feta cheese
  • 1/2 cup grated cheese
  • 1 onion, chopped
  • 1 tsp oregano
  • Black pepper

Instructions

  1. Preheat oven to 180°C
  2. Mix dry ingredients
  3. Whisk wet ingredients
  4. Add vegetables and cheese
  5. Combine mixtures
  6. Pour into pan
  7. Bake 45 minutes
  8. Cool and slice

Notes

Squeeze zucchini to remove moisture. Use good olive oil. Store in fridge up to 4 days.
