Description

Fresh Mediterranean quinoa salad with vegetables, feta, and lemon dressing. Healthy, simple, and full of flavor.


Ingredients

  • 2 cups water

  • 1 cucumber
  • 1/2 red onion
  • 1/2 cup olives
  • 1/2 cup feta cheese
  • Fresh parsley and mint
  • 3 tbsp olive oil

  • 1 tsp oregano
  • Salt and pepper

Instructions

  1. Rinse quinoa
  2. Cook quinoa
  3. Let cool
  4. Chop vegetables
  5. Mix ingredients
  6. Add dressing
  7. Serve
