This Mediterranean Quinoa Salad is fresh, healthy, and full of vibrant flavors. Made with fluffy quinoa, crisp vegetables, olives, and feta cheese, it’s tossed in a simple lemon and olive oil dressing for a light and satisfying dish.
Ingredients

- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, chopped
- 1/2 cup black olives, sliced
- 100g feta cheese, crumbled
- 1/4 cup parsley, chopped
- 2 tbsp fresh mint, chopped
- 3 tbsp olive oil
- Juice of 1 lemon
- 1 tsp oregano
- Salt and black pepper
Instructions
- Rinse quinoa under cold water.
- Cook quinoa with water for 15 minutes.
- Let it rest and cool.
- Chop vegetables and herbs.
- Combine quinoa with vegetables.
- Add feta cheese.
- Whisk olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over salad and toss gently.
Notes
Always rinse quinoa to remove bitterness. Let it cool before mixing. Store in the fridge for up to 3 days. Add extra lemon juice for more freshness.
