Description

This Mediterranean Quinoa Salad is fresh, healthy, and full of vibrant flavors. Made with fluffy quinoa, crisp vegetables, olives, and feta cheese, it’s tossed in a simple lemon and olive oil dressing for a light and satisfying dish.


Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, chopped
  • 1/2 cup black olives, sliced
  • 100g feta cheese, crumbled
  • 1/4 cup parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp oregano
  • Salt and black pepper

Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa with water for 15 minutes.
  3. Let it rest and cool.
  4. Chop vegetables and herbs.
  5. Combine quinoa with vegetables.
  6. Add feta cheese.
  7. Whisk olive oil, lemon juice, oregano, salt, and pepper.
  8. Pour dressing over salad and toss gently.

Notes

Always rinse quinoa to remove bitterness. Let it cool before mixing. Store in the fridge for up to 3 days. Add extra lemon juice for more freshness.
