Description

Mediterranean lentil salad is a fresh, healthy dish made with tender lentils, vegetables, herbs, and a bright lemon dressing. It is simple, nourishing, and full of Mediterranean flavor.


Ingredients

Scale
  • 1 cup lentils
  • 3 cups water
  • 1 bay leaf
  • 1 cup cherry tomatoes
  • 1 cucumber
  • ½ red onion
  • ½ cup parsley
  • 2 tbsp mint
  • ¼ cup feta cheese
  • ¼ cup olive oil
  • Juice of 1 lemon
  • 1 tsp mustard
  • Salt and pepper

Instructions

  1. Rinse lentils.
  2. Cook with water and bay leaf.
  3. Drain and cool.
  4. Prepare vegetables.
  5. Whisk dressing.
  6. Combine everything.
  7. Mix gently and rest.
  8. Serve fresh.

Notes

Do not overcook lentils. Add feta or olives for variation. Store in fridge up to 4 days.
