Description
A fresh and crisp Mediterranean Cucumber Salad made with cucumbers, tomatoes, feta cheese, and a light lemon olive oil dressing. Perfect as a refreshing side dish or light meal.
Ingredients

- 3 large cucumbers, sliced
- 2 tomatoes, chopped
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- Salt and black pepper to taste
- Fresh parsley or mint
- Olives (optional)
Instructions
- Slice cucumbers and lightly salt them.
- Let sit for 10 minutes, then drain excess water.
- Chop tomatoes and thinly slice onion.
- Combine vegetables in a bowl.
- Add feta cheese and olives.
- Mix olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and toss gently.
- Top with fresh herbs and serve.
Notes
Drain cucumbers to prevent a watery salad. Add dressing just before serving. Best enjoyed fresh but can be stored for up to 1 day in the fridge.
