Description

A fresh and crisp Mediterranean Cucumber Salad made with cucumbers, tomatoes, feta cheese, and a light lemon olive oil dressing. Perfect as a refreshing side dish or light meal.


Ingredients

Scale
  • 3 large cucumbers, sliced
  • 2 tomatoes, chopped
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • Salt and black pepper to taste
  • Fresh parsley or mint
  • Olives (optional)

Instructions

  1. Slice cucumbers and lightly salt them.
  2. Let sit for 10 minutes, then drain excess water.
  3. Chop tomatoes and thinly slice onion.
  4. Combine vegetables in a bowl.
  5. Add feta cheese and olives.
  6. Mix olive oil, lemon juice, salt, and pepper.
  7. Pour dressing over salad and toss gently.
  8. Top with fresh herbs and serve.

Notes

Drain cucumbers to prevent a watery salad. Add dressing just before serving. Best enjoyed fresh but can be stored for up to 1 day in the fridge.
