Description
A fresh Mediterranean couscous bowl made with fluffy couscous, chickpeas, olives, feta, and crisp vegetables tossed in lemon olive oil dressing.
Ingredients

- 1 ½ cups couscous
- 2 cups vegetable broth
- 2 tbsp olive oil
- 1 cup cherry tomatoes
- 1 cucumber
- ½ red onion
- ½ cup olives
- 1 cup chickpeas
- ½ cup feta
- 1 lemon
- 1 garlic clove
- parsley
- oregano
- salt & pepper
Instructions
- Add couscous to a bowl.
- Pour hot broth over it.
- Cover and let it sit 5 minutes.
- Fluff with fork.
- Mix olive oil, lemon, garlic, salt, pepper.
- Add vegetables and chickpeas.
- Pour dressing and mix.
- Add feta and parsley.
- Serve.
Notes
Store in fridge up to 3 days. Add lemon before serving to refresh taste.
