Description

A fresh Mediterranean couscous bowl made with fluffy couscous, chickpeas, olives, feta, and crisp vegetables tossed in lemon olive oil dressing.


Ingredients

Scale
  • 1 ½ cups couscous
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes
  • 1 cucumber
  • ½ red onion
  • ½ cup olives
  • 1 cup chickpeas
  • ½ cup feta
  • 1 lemon
  • 1 garlic clove
  • parsley
  • oregano
  • salt & pepper

Instructions

  1. Add couscous to a bowl.
  2. Pour hot broth over it.
  3. Cover and let it sit 5 minutes.
  4. Fluff with fork.
  5. Mix olive oil, lemon, garlic, salt, pepper.
  6. Add vegetables and chickpeas.
  7. Pour dressing and mix.
  8. Add feta and parsley.
  9. Serve.

Notes

Store in fridge up to 3 days. Add lemon before serving to refresh taste.
