Description

I make this Mediterranean chicken salad with tender chicken, fresh vegetables, olives, feta cheese, and a light lemon olive oil dressing. It is fresh, protein-rich, and perfect for a healthy meal.


Ingredients

Scale
  • 2 cups cooked chicken breast
  • 1 cup cherry tomatoes
  • 1 cucumber, diced
  • 1 small red onion, sliced
  • 1/2 cup olives
  • 1/2 cup feta cheese
  • 2 cups mixed greens
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp oregano
  • Salt and pepper

Instructions

  1. Prepare cooked chicken.
  2. Chop vegetables.
  3. Add greens to bowl.
  4. Add vegetables and olives.
  5. Add chicken and feta.
  6. Mix dressing ingredients.
  7. Drizzle over salad.
  8. Toss gently.
  9. Rest briefly.
  10. Serve fresh.

Notes

Use fresh or leftover chicken. Keep dressing light. Add chickpeas or avocado for variation. Best served fresh but can be stored up to 2 days.
