Ingredients

1.5 lbs chicken breast, cut into thin cutlets
12 oz penne or fusilli pasta
1 cup heavy cream
1/2 cup low sodium chicken broth
1/2 cup sun-dried tomatoes, chopped fine
3/4 cup freshly grated parmesan cheese
4 cloves garlic, minced
1 tbsp dried Italian seasoning
Salt and black pepper to taste
Olive oil for searing


Instructions

Boil a large pot of salted water and cook pasta according to package directions until al dente.
Season chicken cutlets with salt, pepper, and half of the Italian seasoning on both sides.
Heat olive oil in a large skillet over medium-high heat.
Sear chicken cutlets for five minutes per side until reaching an internal temperature of 165 degrees Fahrenheit.
Remove chicken from the skillet and set aside to rest.
In the same skillet, sauté minced garlic until fragrant, being careful not to burn it.
Stir in the sun-dried tomatoes and remaining Italian seasoning.
Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer.
Stir in the parmesan cheese until melted and the sauce thickens slightly.
Return the chicken to the skillet or slice and serve over the pasta coated in the sauce.

Notes

Use freshly grated parmesan for the best melt quality in the sauce. If the sauce becomes too thick, add a splash of reserved pasta water to reach your desired consistency. Store leftovers in an airtight container in the refrigerator for up to three days.
