Ingredients
4 lbs sweet potatoes, peeled and cubed
1 cup brown sugar, divided
1/2 cup unsalted butter, melted, divided
1 cup pecans, finely chopped
1/3 cup all-purpose flour
Salt to taste
Instructions
Boil the sweet potato cubes in salted water until fork-tender.
Drain thoroughly and mash the potatoes using a hand mixer or masher until smooth.
Mix in half of the melted butter, half of the brown sugar, and a pinch of salt.
Transfer the potato mixture into a greased baking dish and smooth the top.
In a separate bowl, combine the flour, remaining brown sugar, remaining melted butter, and chopped pecans.
Sprinkle the pecan mixture evenly over the potato base.
Cover tightly and refrigerate for up to 48 hours if making ahead.
Bake at 375°F until the topping is golden brown and the edges are bubbling.
Notes
Ensure potatoes are drained well to avoid a runny casserole. Keep the topping mixture separate until ready to bake if storing for more than 24 hours to ensure maximum crunch.
