Description

Achieve stress-free holiday hosting with these velvety, make-ahead mashed potatoes. Utilizing high-starch Yukon Gold potatoes, cream cheese, and warmed dairy, this recipe creates a stable, luxurious side dish that maintains its perfect texture even after cooling and reheating. A kitchen-tested solution to ensure your holiday side dishes are consistently delicious and completely hassle-free.

Ingredients

Scale

5 lbs Yukon Gold potatoes
1 cup unsalted butter, melted
1.5 cups heavy cream, warmed
8 oz cream cheese, softened to room temperature
2 tsp kosher salt
0.5 tsp black pepper

Instructions

Peel the potatoes and cut into uniform 2-inch chunks.
Place potatoes in a large pot and cover with cold water by at least two inches.
Boil over medium-high heat until fork-tender, approximately 20 minutes.
Drain the potatoes well and return to the dry pot over low heat for 2 minutes to remove excess moisture.
Mash the potatoes using a ricer or sturdy hand masher until smooth.
Fold in the softened cream cheese, warmed cream, and melted butter until fully incorporated and velvety.
Transfer to a container or baking dish, cover, and refrigerate until ready to use.
To reheat, place in a slow cooker on low or cover with foil and warm in a 325°F oven until heated through.

Notes

Ensure the cream is warmed before adding to prevent the potato starch from seizing. The cream cheese is the secret to keeping the potatoes stable and preventing them from becoming gummy during the reheating process.
