Ingredients
Ground Beef 2 lb (85% lean preferred)
Almond Flour 1 cup (substitute with coconut flour)
Sour Cream 1/2 cup (keto-friendly type)
Onion 1 small (finely diced)
Garlic 2 cloves (mince well)
Beaten Egg 1 (flax egg option)
Mustard 1 Tbsp (whole grain or Dijon)
Salt 1 tsp (adjust to taste)
Black Pepper 1/2 tsp
Italian Seasoning 1 Tbsp
Instructions
Preheat oven to 375°F (190°C). Grease a loaf pan with olive oil
Combine ground beef, almond flour, garlic, onion, and egg in a large bowl. Mix gently by hand until just combined
Pour sour cream, mustard, and seasonings into the meat mixture. Stir gently until fully incorporated
Transfer mixture to the prepared pan, shaping into an even loaf. Use fingers to smooth the top
Bake for 1 hour 15 minutes. Baste with remaining sour cream mixture, return to oven, and cook an additional 10 minutes until internal temperature reaches 160°F (71°C)

Tie the meatloaf with kitchen twine if shaping is difficult
