Ingredients
3 lbs Russet Potatoes, peeled and cubed
1 cup Sour Cream
1/2 cup Unsalted Butter, softened
2 cups Sharp Cheddar, freshly shredded
1/2 cup Vegetarian Bits, soy-based
1/4 cup Fresh Chives, finely chopped
Salt and Pepper to taste
Instructions
Place peeled potato cubes in a large pot filled with cold, salted water.
Boil over medium-high heat until fork-tender.
Drain the water thoroughly using a colander.
Mash the hot potatoes using a potato masher until smooth.
Fold in the butter and sour cream until fully incorporated.
Stir in half of the shredded cheddar and most of the chives.
Transfer to a serving dish and top with remaining cheese.
Broil briefly until the cheese is melted and bubbling.
Notes
Hand-mashing is preferred over using a food processor to avoid overworking the starches, which keeps the potatoes fluffy. Serve warm for the best mouthfeel.
