Description
Capture the true essence of autumn with this classic pumpkin bread. This recipe delivers a consistently moist, dense, and flavorful loaf that remains soft for days. By using pure canned pumpkin and a carefully balanced spice profile of cinnamon, cloves, and nutmeg, it creates a comforting treat that pairs perfectly with your morning coffee or afternoon tea. It is a reliable, household staple that is simple to prepare and loved by all.
Ingredients
15 oz pumpkin puree (canned, not pie mix)
3.5 cups all-purpose flour
2.5 cups granulated sugar
1 cup vegetable oil
4 large eggs
2 tsp pumpkin spice
2 tsp baking soda
1.5 tsp salt
Instructions
Preheat the oven to 350°F (175°C).
Grease two 9×5 inch loaf pans with non-stick spray or butter.
In a large mixing bowl, combine the flour, sugar, baking soda, salt, and spices.
In a separate medium bowl, whisk the eggs, pumpkin puree, and oil until smooth.
Fold the wet ingredients into the dry mixture until just combined, taking care not to over-mix.
Pour the batter evenly into the prepared loaf pans.
Bake for 60 to 70 minutes until a wooden skewer inserted into the center comes out clean.
Cool the loaves in the pans for 10 minutes before transferring to a wire rack to cool completely.
Notes
Ensure you use plain pumpkin puree rather than sweetened pumpkin pie filling. Room temperature eggs help with volume. This bread stores well in an airtight container at room temperature for up to four days.
