Description

This lemon pudding is creamy, smooth, and filled with fresh citrus flavor. A light and comforting homemade dessert that melts in your mouth with the perfect balance of sweet and tangy.


Ingredients

  • 2 cups whole milk
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 2 egg yolks
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract

Instructions

  1. Heat milk in a saucepan over medium heat.
  2. Mix cornstarch with a little cold milk until smooth.
  3. Whisk egg yolks with sugar.
  4. Add cornstarch mixture to warm milk.
  5. Stir continuously to prevent lumps.
  6. Temper eggs with warm milk.
  7. Return mixture to saucepan.
  8. Cook until thick and creamy.
  9. Add lemon juice and zest.
  10. Stir in butter and vanilla.
  11. Pour into serving bowls.
  12. Chill for at least 2 hours before serving.

Notes

Use fresh lemon juice for best flavor. Stir constantly while cooking. Cover pudding surface before chilling to prevent skin forming.
