Description

This Lemon Pasta with Spinach is fresh, bright, and lightly creamy. Made with garlic, olive oil, fresh lemon zest, spinach, and Parmesan cheese, this easy Mediterranean pasta recipe comes together in just 25 minutes.


Ingredients

Scale
  • 400 g spaghetti
  • 3 tablespoons olive oil
  • 3 garlic cloves, sliced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 150 g fresh baby spinach
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup reserved pasta water

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until al dente.
  2. Reserve 1/4 cup pasta water and drain.
  3. Heat olive oil and sauté garlic gently.
  4. Add spinach and cook until wilted.
  5. Stir in lemon zest and juice.
  6. Add pasta and reserved pasta water.
  7. Toss with Parmesan cheese and season to taste.

Notes

Salt pasta water generously. Use fresh spinach. Add butter for extra creaminess if desired. Serve immediately for best texture.
