Ingredients

- 400 g spaghetti
- 3 tablespoons olive oil
- 3 garlic cloves, sliced
- Zest of 1 lemon
- Juice of 1 lemon
- 150 g fresh baby spinach
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente.
- Reserve 1/4 cup pasta water and drain.
- Heat olive oil and sauté garlic gently.
- Add spinach and cook until wilted.
- Stir in lemon zest and juice.
- Add pasta and reserved pasta water.
- Toss with Parmesan cheese and season to taste.
Notes
Salt pasta water generously. Use fresh spinach. Add butter for extra creaminess if desired. Serve immediately for best texture.
