- 150g sugar
- 120ml vegetable oil
- 120ml milk
- 2 eggs
- Zest of 2 lemons
- Juice of 2 lemons
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 100g powdered sugar (for glaze)
- 2–3 tablespoons lemon juice (for glaze)
Instructions
- Preheat oven to 180°C and line a loaf pan.
- Mix sugar with lemon zest.
- Add eggs and whisk until smooth.
- Add oil, milk, lemon juice, and vanilla extract.
- In another bowl, mix flour, baking powder, and salt.
- Combine wet and dry ingredients gently.
- Pour batter into loaf pan.
- Bake for 45–50 minutes until a toothpick comes out clean.
- Cool the cake.
- Mix powdered sugar with lemon juice and drizzle over the cake.
Notes
Use fresh lemon juice and zest for best flavor. Do not overmix to keep the cake soft. Store at room temperature for up to 3 days or refrigerate for longer freshness.
