Instructions
- Preheat oven to 180°C (350°F) and line a baking tray.
- Mix flour, baking soda, and salt in a bowl.
- Rub lemon zest into sugar, then cream with butter.
- Add egg, lemon juice, and vanilla extract, and mix well.
- Gradually combine dry ingredients with wet mixture.
- Form dough into small balls and place on tray.
- Bake for 10–12 minutes until edges are lightly golden.
- Cool slightly and serve.
Notes
Use fresh lemon zest for best flavor. Chill the dough for better texture. Do not overbake to keep cookies soft. Store in an airtight container for up to 4 days.
