Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 1/2 cups sugar
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 180°C (350°F) and line a baking pan.
  2. Mix butter and sugar until creamy.
  3. Add flour and salt, mix into dough.
  4. Press dough into pan evenly.
  5. Bake for 18–20 minutes.
  6. Whisk eggs and sugar until smooth.
  7. Add lemon juice and zest.
  8. Mix in flour and baking powder.
  9. Pour filling over warm crust.
  10. Bake for 20–25 minutes.
  11. Let cool completely.
  12. Dust with powdered sugar and slice.

Notes

Use fresh lemon juice for best flavor. Let the bars cool completely before cutting. Store in the fridge for up to 4 days or freeze for longer storage.
