12 Fresh egg pasta sheets
4 cups Whole milk
4 tbsp All-purpose flour
4 tbsp Unsalted butter
2 cups Parmigiano Reggiano, freshly grated
1 cup Onion, finely diced
1 cup Carrot, finely diced
1 cup Celery, finely diced
28 oz San Marzano tomato puree
Olive oil as needed
Sea salt to taste
Cracked black pepper to taste


Instructions

Sauté the finely diced onions, carrots, and celery in olive oil until translucent.
Add the ground beef to the pan and brown thoroughly until no pink remains.
Pour in the tomato puree and season with sea salt and black pepper.
Simmer the sauce on low heat for two hours until thickened.
Melt the butter in a heavy-bottomed saucepan over medium heat.

Gradually whisk in the room-temperature milk and continue cooking until thickened and smooth.
