Ingredients
2 bunches Lacinato kale
0.5 cup plain full-fat Greek yogurt
3 tbsp freshly squeezed lemon juice
2 tbsp nutritional yeast
2 cloves garlic, minced
2 slices sourdough bread, cubed
0.25 cup Parmesan cheese, shaved or grated
1 tbsp olive oil
Instructions
Wash kale thoroughly and remove stems
Slice the kale leaves into thin ribbons
Place kale in a bowl with olive oil and massage for 3 minutes until softened

Pour dressing over massaged kale and toss well
