Ingredients
1 box (8.5 oz) Jiffy Corn Muffin Mix
1 can (15 oz) whole kernel corn, drained
1 can (14.75 oz) cream-style corn
1 cup sour cream
1/2 cup unsalted butter, melted and cooled
2 large eggs
Instructions
Preheat your oven to 375 degrees Fahrenheit.
Grease a 9×9 inch square baking dish with non-stick spray or butter.
In a large mixing bowl, whisk the eggs until the yolks and whites are combined.
Stir in the melted butter and sour cream until smooth.
Add the drained whole kernel corn and the cream-style corn to the bowl and mix well.
Stir in the Jiffy Corn Muffin Mix until just combined.
Pour the batter into the prepared baking dish.
Bake for 45 minutes or until the top is golden brown and the center is set.
Notes
Ensure the whole kernel corn is thoroughly drained to maintain the casserole’s structure. Full-fat Greek yogurt can be used as a healthier substitute for sour cream. Store leftovers in the refrigerator for up to 3 days.
