1.5 lbs boneless, skinless chicken breast, cut into strips
1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
4 cloves garlic, minced
1 cup low sodium chicken broth
1/2 cup heavy cream
3 cups fresh spinach, packed
1/2 cup Parmesan cheese, freshly grated
1 tablespoon Italian seasoning
Salt and pepper to taste
1 tablespoon olive oil


Instructions

Season chicken strips with salt, pepper, and Italian seasoning.
Set Instant Pot to Sauté mode and add oil.
Sear chicken for 2 minutes per side until golden brown; remove and set aside.
Deglaze the pot with chicken broth, scraping up brown bits.
