Ingredients
1.5 lbs boneless chicken thighs (6–8 pieces)
1 medium onion, chopped
4 garlic cloves, minced
1 cup BBQ sauce
1/2 cup ketchup
2 tbsp molasses
1 tsp smoked paprika
1 tbsp cider vinegar
1 cup chicken broth
2 tbsp butter (or coconut oil for dairy-free)
Instructions
Sauté onion and garlic in Instant Pot on sauté mode until softened
Add chicken thighs and sear both sides until browned
Stir in BBQ sauce, ketchup, molasses, paprika, vinegar, and broth
Secure lid, set to manual high pressure for 10 minutes
Quick release pressure and skim excess fat
Return chicken to pot, glaze with sauce, and simmer 15 minutes
