- 200g plain flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp nutmeg
- 120g unsalted butter
- 100g brown sugar
- 3 tbsp honey
- 2 large eggs
- 120ml milk
- Pinch of salt
Instructions
- Preheat oven to 175°C and prepare cake tin.
- Mix dry ingredients in a bowl.
- Cream butter and sugar until fluffy.
- Add eggs one at a time.
- Mix in honey.
- Alternate dry ingredients and milk.
- Pour into tin.
- Bake 35–40 minutes.
- Cool before serving.
Notes
Warm honey slightly before mixing for better texture. Do not overmix batter. Store in airtight container for up to 3 days. Freezes well for up to 2 months.
