- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1/2 cup olive oil
- 3/4 cup pure honey
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup pine nuts
- Zest of 1 orange
Instructions
- Preheat oven to 180°C (350°F) and line baking sheet with parchment paper.
- Whisk flour, baking powder, baking soda, salt, and cinnamon together.
- Cream butter, olive oil, honey, and brown sugar until smooth.
- Add egg, vanilla, and orange zest and mix well.
- Gradually combine dry ingredients with wet mixture.
- Fold in toasted pine nuts.
- Chill dough for 30 minutes.
- Shape into balls and place on baking sheet.
- Press extra pine nuts on top.
- Bake for 12–15 minutes until golden.
Notes
Toast pine nuts in a dry pan for deeper flavor. Store cookies in an airtight container at room temperature for up to 5 days. Freeze dough for up to 2 months.
