It is an ideal, meat-free accompaniment to any festive roast, offering a sophisticated, herbaceous profile that elevates your meal without the need for meat-based broths.
Ingredients
1 loaf sourdough bread, cubed into 1-inch pieces
1 cup unsalted butter, high-fat European style
2 large yellow onions, finely diced
4 celery stalks, thinly sliced
1/4 cup fresh sage, finely chopped
2 tbsp fresh thyme, leaves stripped
3 cups low-sodium vegetable stock
Salt and black pepper to taste
Instructions
Preheat your oven to 375 degrees Fahrenheit.
Arrange the sourdough bread cubes on baking sheets and toast for 15 minutes until dry and slightly golden.
Melt the butter in a large skillet over medium-high heat.
Add the diced onions and sliced celery to the skillet and sauté until translucent and softened.
Stir in the chopped sage and fresh thyme and cook for one minute until fragrant.
Combine the toasted bread cubes and the sautéed vegetable mixture in a large mixing bowl.
Gradually pour the vegetable stock over the mixture while folding gently to ensure the bread is moistened but not mushy.
Season the mixture with salt and pepper to your preference.
Transfer to a buttered baking dish and bake for 30 minutes, or until the top is golden brown and crispy.
Notes
Use day-old bread for the best results as it has less moisture and absorbs the stock better. Ensure you do not overmix when adding the stock to keep the bread cubes intact. If you prefer a crunchier top, you can remove the foil during the final 10 minutes of baking.
