- 1 large onion, chopped
- 3 cloves garlic, minced
- 500 g (1 lb) ground beef
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tablespoons tomato paste
- 1 can (14 oz) crushed tomatoes
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) kidney beans, drained
- 1 can (14 oz) black beans, drained
- 1 cup beef broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
Instructions
- Heat olive oil in a large pot and sauté onion until soft.
- Add garlic and cook for 1 minute.
- Add ground beef and brown thoroughly.
- Add diced bell peppers and cook 5 minutes.
- Stir in tomato paste and cook briefly.
- Add crushed tomatoes, diced tomatoes, beans, and broth.
- Season with chili powder, cumin, paprika, oregano, salt, pepper, and cayenne.
- Bring to boil, then reduce heat and simmer 35–45 minutes.
- Adjust seasoning and serve warm.
Notes
Simmer longer for deeper flavor. Add a small piece of dark chocolate for richness. Store refrigerated up to 4 days or freeze up to 3 months.
