Description

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 500 g (1 lb) ground beef
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tablespoons tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained
  • 1 can (14 oz) black beans, drained
  • 1 cup beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Heat olive oil in a large pot and sauté onion until soft.
  2. Add garlic and cook for 1 minute.
  3. Add ground beef and brown thoroughly.
  4. Add diced bell peppers and cook 5 minutes.
  5. Stir in tomato paste and cook briefly.
  6. Add crushed tomatoes, diced tomatoes, beans, and broth.
  7. Season with chili powder, cumin, paprika, oregano, salt, pepper, and cayenne.
  8. Bring to boil, then reduce heat and simmer 35–45 minutes.
  9. Adjust seasoning and serve warm.

Notes

Simmer longer for deeper flavor. Add a small piece of dark chocolate for richness. Store refrigerated up to 4 days or freeze up to 3 months.
