Ingredients
5 oz mixed greens
1 cup diced cucumber
1 pint cherry tomatoes, halved
1/2 cup diced bell pepper
1/2 cup corn
1 cup sliced strawberries
1/2 avocado, diced
1/2 cup chickpeas, drained and rinsed
1/4 cup crumbled feta cheese
3 tablespoons lemon juice
2 tablespoons olive oil
2 teaspoons honey
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
Wash and dry mixed greens.
Dice cucumber, bell pepper, and avocado.
Halve cherry tomatoes and slice strawberries.
In a large bowl, combine greens, cucumber, cherry tomatoes, bell pepper, corn, strawberries, avocado, and chickpeas.
In a small bowl, whisk together lemon juice, olive oil, honey, Dijon mustard, salt, and pepper.
Pour dressing over the salad and toss gently.
Top with crumbled feta cheese (optional) before serving.
Notes
Substitute blueberries for strawberries if preferred.
Use plant-based feta for a vegan option.
