- 2 cups fresh or frozen peas (thawed)
- 1/2 cup cucumber, finely chopped
- 1/4 cup red onion, thinly sliced
- 1/3 cup feta cheese, crumbled
- 2 tablespoons fresh mint, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey
- Salt to taste
- Black pepper to taste
Instructions
- Thaw and drain the peas if using frozen.
- Chop cucumber and slice onion thinly.
- Place peas, cucumber, and onion in a bowl.
- Add mint, parsley, and feta cheese.
- In a small bowl, whisk olive oil, lemon juice, honey, salt, and pepper.
- Pour dressing over salad and toss gently.
- Taste and adjust seasoning before serving.
Notes
Use fresh peas when available for the best flavor. Soak red onion in cold water for milder taste. Store in fridge up to 2 days. Add nuts or avocado for variation.
