Description

Ingredients

  • 2 cups fresh or frozen peas (thawed)
  • 1/2 cup cucumber, finely chopped
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup feta cheese, crumbled
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Thaw and drain the peas if using frozen.
  2. Chop cucumber and slice onion thinly.
  3. Place peas, cucumber, and onion in a bowl.
  4. Add mint, parsley, and feta cheese.
  5. In a small bowl, whisk olive oil, lemon juice, honey, salt, and pepper.
  6. Pour dressing over salad and toss gently.
  7. Taste and adjust seasoning before serving.

Notes

Use fresh peas when available for the best flavor. Soak red onion in cold water for milder taste. Store in fridge up to 2 days. Add nuts or avocado for variation.
