1/2 cup plain Greek yogurt

2 large eggs

Instructions

Preheat your oven to 350 degrees Fahrenheit.
Grease a 9×5 inch loaf pan thoroughly with coconut oil or non-stick spray.
Mash bananas in a large mixing bowl until mostly smooth but still slightly chunky.
Whisk in the Greek yogurt, maple syrup, and eggs until the mixture is uniform.
Stir in the whole wheat pastry flour, baking soda, and cinnamon until just combined.
Pour the batter into the prepared loaf pan.
Bake for 55 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pan for 10 minutes before transferring to a wire rack.

Notes
