Description

Indulge in the cozy essence of autumn with these delicious baked apple cider donuts. By reducing fresh apple cider into a concentrated syrup and utilizing wholesome ingredients like Greek yogurt and applesauce, this recipe offers a lighter, nutrient-dense alternative to traditional fried versions. They are soft, moist, and infused with warm cinnamon spice, making them the perfect handheld treat for crisp fall days without the heavy grease of bakery-bought alternatives.

Ingredients

Scale

2 cups apple cider (reduced to 1/2 cup)
2 cups whole wheat pastry flour
2 tsp baking powder
1.5 tsp ground cinnamon
1/2 cup plain Greek yogurt
1/4 cup unsweetened applesauce
1/3 cup pure maple syrup
1 pinch salt

Instructions

Simmer the apple cider in a saucepan over medium heat until it reduces to exactly 1/2 cup.
Remove from heat and allow the reduced liquid to cool completely.
Preheat your oven to 350 degrees Fahrenheit.
In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
In a separate bowl, combine the Greek yogurt, applesauce, maple syrup, and the cooled reduced cider.
Fold the wet ingredients into the dry ingredients until just combined; do not over-mix.
Grease a donut pan thoroughly with non-stick spray or coconut oil.
Pipe or spoon the thick batter into each donut mold.
Bake for 12 minutes or until the donuts spring back when touched.
Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Ensure the cider is fully cooled before mixing to maintain the batter’s integrity. Store these donuts in an airtight container at room temperature for up to 3 days. Use Ceylon cinnamon for a sweeter flavor profile. If you prefer a lighter texture, you can sift the flour before measuring.
