Description
A lighter, air-fried version of chicken parmesan with crispy panko-Parma crust, melted mozzarella, and 40% fewer calories than deep-fried. Achieves golden-brown cheese and juicy chicken in 35 minutes using an oil-free method.
Ingredients
Chicken breasts (4 pieces, 5 oz each, 1½ inch thickness)
Breadcrumbs (1 cup, fresh)
Grated Parmesan (¾ cup, blend with Pecorino for nutty flavor)
Mozzarella cheese (1 cup, fresh)
Olive oil spray (1 tbsp, low sodium)
Instructions
Pat chicken dry; pound to even thickness
Mix breadcrumbs and ¾ cup Parmesan on a plate
Press chicken into coating until fully coated
Air fry at 375°F (190°C) for 8 minutes
Flip and cook 5 minutes
Open chicken and insert 2 tbsp mozzarella
Air fry 7 minutes to melt cheese
Notes
Chill crumb-coated chicken 10 minutes before cooking for better browning
Chicken should be room temperature
Chili oil spray lightly before frying
Ideal air fryer occupancy is 2/3 full
Flip chicken only once during initial cook cycle
