Description

2 lbs Beef Chuck Roast, cut into 1.5-inch cubes
4 cups Beef Stock, low-sodium
3 tbsp Balsamic Vinegar
2 tbsp Soy Sauce
2 tbsp Tomato Paste
3 large Carrots, chopped into rounds
1 lb Yukon Gold Potatoes, cubed
2 medium Onions, diced finely
4 cloves Garlic, minced
Salt and black pepper to taste
2 tbsp Vegetable oil for searing


Instructions

Season beef cubes generously with salt and black pepper on all sides.
Heat oil in a heavy-bottomed Dutch oven over medium-high heat.
Brown the beef in batches, ensuring each side develops a dark crust, then remove and set aside.
Sauté onions in the remaining fat until translucent and soft.
Stir in tomato paste, garlic, and herbs, cooking for two minutes until fragrant.
Deglaze the pot with balsamic vinegar, scraping up all the browned bits from the bottom.
Return the beef to the pot and pour in the beef stock and soy sauce.
Cover and simmer on low heat for two hours until the beef is tender.
Add the carrots and potatoes, then simmer for an additional hour until vegetables are soft.

Notes

For a thicker gravy, you can mix 1 tablespoon of cornstarch with a splash of water and stir it into the stew during the final 15 minutes of cooking. Leftovers can be stored in an airtight container for up to 3 days and taste even better the next day.
