Designed for efficiency, this recipe is perfect for busy weeknights or meal prepping. The combination of high-heat searing and a light broth simmer creates a delicious, juicy taco filling that is both healthy and satisfying.
Ingredients
1 lb Ground Chicken (90/10 lean ratio)
1 tbsp Olive oil
2 tsp Chili powder
1 tsp Cumin
1 tsp Garlic powder
1 tsp Onion powder
1/4 cup Chicken broth
8–10 Corn tortillas
Instructions
Heat olive oil in a large cast-iron skillet over medium-high heat until shimmering.
Add ground chicken to the skillet in an even layer and brown.
Break the chicken into small crumbles using a wooden spatula.
Once the chicken reaches 140F, stir in the chili powder, cumin, garlic powder, and onion powder.
Pour the chicken broth over the meat to create a light sauce.
Simmer the mixture for 5 minutes until the liquid reduces and coats the chicken evenly.
Toast corn tortillas before serving and fill with the seasoned chicken mixture.
Notes
Do not move the chicken for the first two minutes of cooking to ensure a nice brown crust forms, which locks in the juices. Store leftover meat in an airtight container for up to 3 days.
